What's In A Name?

Everything when it comes to kids!

I remember growing up that my mom would come up with fun names for the recipes she created, and it always seemed to make a difference in whether or not we would be willing to try it.  Want your kids to eat oatmeal?  Well, give them Pear Oatmeal Breakfast Pudding.  Use wheat germ in the topping of your healthy Breakfast Cake.  (and throw some wheat flour into the recipe while you're at it!)

When it comes to kids, names mean everything.

And, of course, she always got us involved!  We were each assigned a day of the week that we would help her cook the meals, that way we got special one-on-one time with mom but also learned some valuable cooking skills.

Speaking of getting your kids involved, here's a great recipe from my mom's kitchen that your kids can help with!

Invisible Banana French Toast

Ingredients:

1 ripened banana
2 eggs
1/2 to 1 cup milk
1 tsp cinnamon
1/2 tsp nutmeg
sliced bread (white or wheat)

Directions:

Preheat skillet over medium heat on stove.  Place peeled banana in gallon sized zip-lock bag and let kids mash it up.  Beat eggs and milk together in a bowl.  Add mashed bananas and stir.  Mix in cinnamon and nutmeg.  Spray skillet with non-stick cooking spray.  Dip bread in banana mixture and cook in skillet until both sides are a deeper brown color (not light brown, not black).  Serve with your favorite topping!  (I have found maple syrup tastes the best)  (alternately, you can also mix the first five ingredients in a blender and let the kids have fun with pressing the buttons!)
