Peanutbutter Coffee Cake

I was eating some peanutbutter the other day when I took a swig of my coffee and the taste was incredible! I would love some ideas on perfecting a cake recipe that involves these two ingredients! I make a great peanutbutter cake but this is new. I was wondering if brewed or instant coffee would work better for this idea and if I should include coffee in the icing.

I think I would begin by making a streusel type topping.  Put some in the bottom of a bundt or tube pan.  Make a yellow cake mix and add peanut butter to the cake mix, probably anywhere between 1/2 to 1 Cup (for variety you could divide your cake batter and add peanut butter to half and swirl or alternate dollops of the peanut butter batter.)  Add 1/2 the batter to the pan sprinkle the rest of the streusel then add the rest of your batter.  When cake is done you will have a crunchy streusel topping and no added decoration would be needed but you could drizzle a glaze over the top. You could guild the lilly so to speak if you made a peanut butter glaze, a little conf. sugar, hot water and a few tablespoons of peanut butter.
Just an idea if you try it let me know how it turns out!

Hi boobearsmom, I thought I posted on this, but guess not. I would mix the coffee, a strong coffee, in your recipe for the liquid, maybe even putting a little instant coffee powder in the mix and try it, you can always adjust it the next time, although I don't think it will taste the same, since you were drinking the coffee.Even in the icing. Let us know how it worked,Smile

Thank you! It did not even occur to me to sub coffee for the milk or water! I'm smacking myself on the head right now. I haven't logged in for a couple weeks and I won't be doing any shopping for another week but I will definately try it and let you know! If it's good I'll post the recipe right here.Big Smile

OK, here it is! I took a regular box yellow cake mix, added 1 cup peanutbutter and substituted double strength brewed coffee for the water. For the icing I cheated. I used a large container of whipped vanilla icing and added 3/4 cup peanutbutter, 3/4 cup powdered sugar and about 2 tbsp coffee. The cake turned out great but the taste was not exactly what I was looking for. I couldn't really taste the coffee in it. If I had made the coffee any stronger I would have had to add more sugar to the mix but I think it would have been closer to the flavor I wanted. To sum it up, I got a great cake with a different flavor from the norm and everyone liked it. Thanks for the suggestions!

boobearsmom, it's great that you tried it,Wink. If you want the coffee taste stronger, try adding some instant coffee powder to the cake mix also, and maybe even the icing mix?!?. again, let us know,Smile
