oven fried chicken

Hello, I'm new to this community, but was thrilled to find it.  I somehow lost my very old hard bound Betty Crocker recipe book that I've had since my early twenties  (thirty years ago).  I always made the oven fried chicken, and want to be sure of the recipe.  Does anyone have it? My memory tells me that it was a dry flour coating with minimal spices, with 1/4 cup butter and 1/4 cup crisco melted in a very hot oven.  Please let me know if the exact recipe is out there somewhere.  Thanks.

Oven - Fried Chicken
21/2-3 lb broiler-fryer chicken, cut up.
1/4 cup shortening
1/4 cup butter or margarine
1/2 cup all purpose flour
1 teaspoon salt
1 teaspoon paprika
1/4 teaspoon pepper
Heat oven to 425.  Wash chicken and pat dry.
In oven, melt shortening and butter in baking pan, 13X9X2 inches. Mix flour, salt, paprika and pepper.  Coat chicken pieces thoroughly with flour mixture.
Place chicken skin side down in melted shortening.  Cook un covered 30 minutes.  Turn chicken; cook 30 minutes longer or until thickest pieces are fork tender.

By the way thanks to you I now know what I am making for dinner tonight!!

Just the recipe I was looking for.  Thank you very much.  I'm hoping to find the cookbook, as there are several recipes I make from it.  You've really helped me on this one though.  Thanks again.

Hi again,

In the same cookbook is a recipe for a struesel coffee cake with instructions to make it into a blueberry cake.  I love this cake, and with blueberry season right around the corner I'd love to make it.  Do you have that recipe?  Thanks in advance.

With luck this is what you are looking for.

Favorite Coffee Cake.
1 1/2 Cups all-purpose flour
3/4 Cup sugar
2 1/2 teaspoon baking powder
3/4 teaspoon salt
1/4 cup shortening
3/4 cup milk
1 egg
TOPPING BELOW

Heat oven to 375 degrees.  Grease round layer pan, 9X1 1/2 inches, or 8X8,  or  9X9 square.
Blend all ingredients except topping; beat vigorously 1/2 minute.  Spread in pan.

Sprinkle topping over batter. Bake 25-30 minutes or until wooden pick inserted in center comes out clean.  Serve warm.

TOPPING
Mix 1/3 cup brown sugar (packed), 1/4 cup all purpose flour, 1/2 teaspoon cinnamon and 3 tablespoons firm butter until crumbly.

Variations
Blueberry Buckle
Increase flour to 2 cups, carefully stir in 2 cups well drained blueberries into batter and omit topping.  Mix 1/2 Cup sugar, 1/3 cup all purpose flour, 1/2 teaspoon cinnamon and 1/4 cup soft butter; sprinkle over batter in pan.  Bake 45-50 minutes

Jam-Raisin Coffee Cake
Decrease sugar to 1/4 cup and omit topping; spread batter in prepared square pan.  Mix 1/4 cup brown sugar-packed-, 1/2 cup raisins and 1/4 teaspoon cinnamon; sprinkle over batter.  Spoon 2/3 cup cherry or apricot jam or orange marmalade over brown sugar mixture.
While warm, spread with Confectioners' Sugar Icing: Blend 1 Cup confectioners sugar, 1/2 teaspoon vanilla and about 1 tablespoon water.

Streusel-filled Coffee Cake
Omit topping: spread half the batter in prepared pan.  Mix 1/2 cup brown sugar (packed), 2 teaspoons cinnamon, 1/2 cup finely chopped nuts and 2 tablespoons butter, melted; sprinkle half the mixture over batter in pan.  Top with the remaining batter, then remaining brown sugar mixture.

This recipe is not the one that I have made in the past.  I think the name of the cake in the book is called struesel coffee cake and it has a variation for blueberry cake.  I remember looking it up in the index under blueberry cake.  It's  made by putting half the batter in baking pan then put half the blueberries.  Pour rest of batter over blueberries, and top with remaining berries.  It is made in a square baking dish.  I am bidding on the cookbook to replace mine on ebay, hoping to win it soon.  Thanks in advance if you find it.
