Looking for Old Recipe

Back in the late 70's I had a Betty Crocker recipe card file.  during a recent move out of state it got lost.  I am looking for a recipe for Wakiki meatballs which I know contained ground beef, ginger, pineapple bits, etc.  Does anyone know this recipe.  I need it for my son's wedding reception.

You are in luck
Waikiki Meatballs
1 1/2 Pound ground beef
2/3 Cup cracker crumbs
1/3 Cup minced onion
1 egg
1 1/2 tsp salt
1/4 tsp ginger
1/4 Cup milk
1 Tb shortening
2 Tb cornstarch
1/2 Cup brown sugar
1 can (13 1/2 ounces) pineapple tidbits, drained, reserve syrup
1/3 cup vinegar
1 Tb soy sauce
1/3 Cup chopped green pepper
Mix thoroughlt beef, crumbs, onion, egg, salt, ginger and milk.  Shape mixture by rounded tablespoonfuls into balls.  Melt shortening in large skillet; brown and cook meatballs.  Remove meatballs; keep warm.
Mix cornstarch and sugar.  Stir in reserved pineapple syrup, vinegar and soy sauce until smooth.  Pour into skillet; cook over medium heat, stirring constantly, until mixture thickens and boils.  Boil 1 minute.  Add meatballs, pineapple tidbits and green pepper; heat through.

Enjoy

Re: Looking for Old Recipe

Happy Birthday to you, Happy Birthday to you, Happy Birthday to you!!!!!

This will not be as good as your Mom's  but here is a quick and easy Red Velvet Cake
Prepare pans, grease and flour 2-- 9 inch pans.   Pre heat oven to 350 degrees F.
1 package (18.25 ounces) German Chocolate cake mix-with pudding
1 Cup sour cream
1/2 Cup water
1/4 Cup vegetable oil
1 bottle--1 ounce red food coloring
3 large eggs
1 tsp vanilla extract

Place cake mix, sour cream, water, oil, food coloring, eggs, vanilla in a large mixing bowl.  Blen with an electric mixer on low speed for 1 minute.  Stop the mixer and scrape down the sides of the bowl.  Increase the speed to medium and beat for 2 minutes, scraping down the sides again .  the batter should look well blended.  Divide the batter between the prepared pans.
Bake until cakes test done, 28-30 minutes.  Cool in pans on rack for 10 minutes then turn onto rack and allow to cool completely for 30 minutes.

Cream Cheese Frosting
1 package (8 ounces) cream cheese  room temperature
1 stick butter at room temperature
3 3/4 Cups confectioners sugar, sifted
1 teaspoon vanilla extract
Blend butter and cream cheese together on low speed until combined.  Stop machine, add confectioners sugar, a bit at a time blending with the mixer on low speed until the sugar is well incorporated, 1 minute.  Add the vanill then increase mixer speed to medium and blend until fluffy.  About 1 minute more.

Re: Red Velvet Cake for Alexis10

Alexis10,

I just saw your request for a Red Velvet Cake -I didn't join the message boards until after your birthday,  I hope that you had a good Red Velvet Cake for your birthday.  I have a recipe that I got from my friend about 30 years ago, and I haven't used another recipe since -it is the best Red Velvet Cake I have tasted.  Emmie (my friend) cuts her cake in half when she makes it and wraps it good freezes half of it. Then, when she needs dessert, or wants to give someone a treat, she brings out the saved half of the cake.  Here it is.  I hope that you make it -or that someone makes it for you.  "Try it, you will really like it. Red Velvet Cake

2 eggs

1-1/2 cups sugar

2-1/2 cups cake flour

1 cup buttermilk

1-1/2 cup Crisco oil (only use Crisco)

1 teaspoon vanilla

1 teaspoon vinegar

1 (1 oz) bottle red food color (Don't be tempted to use more.  Some recipes use 2 ounces.  This is a pretty red and you  don't want it to tast like food coloring)

1 tespoon baking soda

1 teaspoon cocoa

Cream sugar and eggs and all liquids together.

Mix cocoa and flour together and add to sugar/eggs mixture.  Mix soda in last.

Pour into three greased cake pans (8 or 9 inch).  Bake at 350 degrees for 20 minutes (or until done when tester is inserted).  Do not overcook.  Cool and frost with Cream Cheese Frosting.

Cream Cheese Frosting.

1 box 4X confectioners sugar

1 stick margarine

1 (8-oz) cream cheese

1 cup nuts (We use pecans), chopped fine

Blend all ingredients and spread between layers and on top of cake.  Enjoy!  Please let me know if you make it.

Re: Looking for Old Recipe

Try this next year.....what makes the red velvet cake red is not just the coloring...its' the vinegar! Without it the red does not come through. It doesn't effect the taste...it sets the color...just like it sets the color in your fabric that you use to sew with... I discovered this by almost forgetting to put in the venegar....wondering why the batter was brown...a deeper red brown...but still brown. Then I added the vinegar and whola! Bright red...very pretty. I made it for a freind who turned 50 and he remembered having it with cinnamon candies on top...so I pur them on top of the frosting....he loved it! I don't remember that as a kid....I found the receipe on FoodTV.com. I didn't see the venegar in any of Mrs. Crocker's receipes.
