Potato salad is a favorite at our house. We make it with potatoes, of course, hard-boiled eggs, some Miracle-Whip( just enought to coat), seasonings, onions, etc. It tastes great, but when it sits in the refrigerator 1 or 2 nights, it gets incredibly soupy. So much so that we have to drain it, and then it tastes dry. Does anybody have any idea why this is happening? The only semi-liquid we put in is the Miracle Whip, and it is quite viscous. Does this separate after a time? Thanks for any suggestions.
