Re: Betty Crocker Potato Ideas

I have a question about the potato products. The instant mashed potatoes, is the mono diglyicerides from a vegetable source or animal? I'm vegetarian and it would be nice to be able to use them. And what about the scalloped potatoes, are the cheeses made with animal rennet or vegetable? Thanks I hope you can help!

Hi Patty, Mostly I use them plain. But sometimes I add them to left over real mashed potatoes to make more and I thinken some soups with them. I often mix them in canned chicken noodle soup to make the soup thick. I tried to use them to thicken gravy, but that didn't work to well, it left a rough texture to the gravySad

I purchased the Betty Crocker Julian Potatoes initially as a side dish.  Last night I was looking in the pantry to see what to cook for dinner.  I knew the Julian Potatoes would not be enough for my husband, son and myself for dinner.

I found 2 lbs of breakfast sausage in the freezer.  I cooked the breakfast sausage, crumbling as it cooked and drained completely,

I followed the directions on the box of Julian Pototoes.  I added the sausage and a can of Cream of Mushroom soup and mixed real well.  I put the dish in the oven and cooked 10 minutes longer than the directions stated (20).

When it came out of the oven, I sprinkled top with cheddar cheese.

It was WONDERFUL!  My son and husband had 1st, 2nds and 3rds!  I will be going to the store this weekend and will be purchasing more of the Julian Pototoes.

Note:  I used "Hot" sausage, but I am sure most people would want to use "mild".

Oh my.. that sounds good.  I may have to try that one weekend-minus the cream of mushroom soup and add some scrambled eggs.  Sounds like a great brunch.
By the way I'm with you all the way with the Hot sausage.

Microwave Directions: Important: Because microwaves cook differently, time is approximate. 1 Stir potatoes, sauce mix, 2-1/2 cups hot water, 2/3 cup milk and 1 tablespoon margarine or butter, softened, in 2-quart round microwavable casserole or bowl. 2. Microwave uncovered on High 11 to 16 minutes, stirring every 5 minutes, just until tender (potatoes will continue to soften and sauce will thicken as they stand). Dish will be hot. High Altitude (3500 - 6500 ft): Oven: For 1 package, no changes. For 2 packages, increase bake time to about 35 min. Stove-Top: No changes. Microwave: No changes.

I mix the mashed potatoes up as suggested, then add an egg and some grated cheddar cheese.  I put the mixture in a pastry bag with a star tip and pipe the mashed potatoes into 3 inch mounds.  Sprinke with a little paprika and bake at 350 about 20 minutes.  They are pretty and delicious...and I always get compliments!
