SEARCHING!---1971 Recipe Card Library Carrot Cookies w/ Orange Icing

Hi everyone!

I am desperately looking for the recipe for Carrot Cookies with Orange Icing from the 1971 Recipe Card Library!

All I know is it was under the "Family Favorites" category

Can anyone help me?

Here are the recipes for which you are looking:

Carrot Cookies

  • 1 cup shortening (part soft butter)
  • 3/4 cup sugar
  • 2 eggs
  • 1 cup mashed cooked carrots
  • 2 cups Gold Medal flour*
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 3/4 cup shredded coconut
  • Orange Butter Icing (below)

Heat oven to 400°.  Mix shortening, sugar, eggs and carrots.  Blend in flour, baking powder and salt.  Stir in coconut.  Drop dough by teaspoonfuls about 2 inches apart onto lightly greased baking sheet.

Bake 8 to 10 minutes or until no imprint remains when touched lightly.  Immediately remove from baking sheet.  Cool.  Frost with Orang Butter Icing.  4 dozen cookies.

*If using self-rising flour, omit baking powder and salt.

Orange Butter Icing

  • 3 tablespoons soft butter or margarine
  • 1-1/2 cups confectioners' sugar
  • 2 teaspoons grated orange peel
  • About 1 tablespoon orange juice

Blend butter and sugar.  Stir in orange peel and juice.  Beat until frosting is smooth and of spreading consistency.

Note:  Next time you prepare carrots for dinner, cook an extra cupful for these moist, golden cookies.

Hi I have that receipe. I am looking for a receipe for a "new port beef casserole or something like that. It had ground beef, spinach, shell macaroni in it.

Carrot Cookies

1 cup shortening (part soft butter)

I am in desparte need for a simple confectioners sugar icing receipe.  Last minute and don't have alot to select from.

Thank you so much for asking this question. I found it in a random search and it is just the recipe I have been looking for. My grams used to make these and I have never been able to find the recipe.

Im on to them today....hope the hubby loves em like I do.
