I just saw your request for a Red Velvet Cake -I didn't join the message boards until after your birthday, I hope that you had a good Red Velvet Cake for your birthday. I have a recipe that I got from my friend about 30 years ago, and I haven't used another recipe since -it is the best Red Velvet Cake I have tasted. Emmie (my friend) cuts her cake in half when she makes it and wraps it good freezes half of it. Then, when she needs dessert, or wants to give someone a treat, she brings out the saved half of the cake. Here it is. I hope that you make it -or that someone makes it for you. Red Velvet Cake
2 eggs
1-1/2 cups sugar
2-1/2 cups cake flour
1 cup buttermilk
1-1/2 cup Crisco oil (only use Crisco)
1 teaspoon vanilla
1 teaspoon vinegar
1 (1 oz) bottle red food color (Don't be tempted to use more. Some recipes use 2 ounces. This is a pretty red and you don't want it to tast like food coloring)
1 tespoon baking soda
1 teaspoon cocoa
Cream sugar and eggs and all liquids together.
Mix cocoa and flour together and add to sugar/eggs mixture. Mix soda in last.
Pour into three greased cake pans (8 or 9 inch). Bake at 350 degrees for 20 minutes (or until done when tester is inserted). Do not overcook. Cool and frost with Cream Cheese Frosting.
Cream Cheese Frosting.
1 box 4X confectioners sugar
1 stick margarine
1 (8-oz) cream cheese
1 cup nuts (We use pecans), chopped fine
Blend all ingredients and spread between layers and on top of cake. Enjoy! Please let me know if you make it.
