Cheese Pennies

From the 1960s:  does anyone remember the recipe for cheese pennies or coins, a small wafer made with a jar of Kraft cheese spread, flour and maybe some butter?  Thanks.

Re: Cheese Pennies

Hi,

I have a similiar recipe if your interested it's made with cheddar cheese, but I'm sure you can substitute it with the kraft cheese if you like. Let me know and I'll be happy to give it to you.

Re: Cheese Pennies

Most recipes I see today use grated cheese, but I did find this one.  You can pipe these coins instead of straws or if the dough is firm enough, roll into a log, refrigerate until chilled, then slice into coins.

Cheese Straws

1 (5 ounce) jar Kraft Olde English Cheese spread
2 sticks butter, softened (no substitute)
1-3/4 cups all-purpose flour
cayenne pepper, to taste

Preheat oven to 350° F.
Cream cheese and butter until smooth and fluffy, add pepper, then mix in flour until well mixed.
Line baking sheets with foil.  On ungreased foil, pipe cheesestraws with star or basketweave tip onto foil into 3 inch strips and bake approximately 10-12 minutes or until edges are lightly browned.

Re: Cheese Pennies

That's the one!  Thanks.  Those Kraft jars are hard to come by these days but I have found one outlet.
