Can't eat red meat

I have recently been told by my doctor that I can no longer eat red meat because it's making me sick. I can eat chicken and turkey but I'm getting tired of my recipes. Does anyone have anything good to liven up chicken and turkey that's quick and easy but tastes good?

Onions and bell peppers mixed in with ground turkey meat and topped with Lemon-Pepper seasoning. Fry in pan with no grease. Or Turkey Goulosh, brown turkey meat with Lemon-Pepper seasoning, add McCormick taco seasoning packet, with water, cook down, add a can of lima beans, can of whole tomatoes and/or corn. Easy and good.

Re: Can't eat red meat

Our favorite chicken recipe is done in the crockpot.  Spray crockpot with Pam.  Add boneless chicken breasts or thighs, 1/2 jar of your favorite salsa, 1/4 cup water. Cook on low all day.  Serve with noodles or rice and a veggie.

Or you can use a can of diced tomatoes instead of the salsa. There are several varieties of diced tomatoes available, like garlic and onion, so you can have a variety of choices.

I have done as many as 12 boneless breasts in the crockpot. I then used a whole jar of salsa and guessed on adding more water.  delicious!

Re: Can't eat red meat

geograc, I was wondering why couldn't you use any or every recipe that you have or now make and just use the chicken or turkey in place of the beef? I personally love Turkey & chicken Smile, but wouldn't want to eat only that, it might be pretty fowl!!!Huh?, hahaha. Anyhow, one of my favorites is fixed in the crock-pot, most likely by a "crack-pot",Big Smile. I use it for the main meal and then shred it and put it back into the juice and use it for sandwiches.:  1 turkey breast, 2-4 stocks of celery( depends on how well you like celery), 1 pk. dry onion soup mix or med. chopped onion( I like the soup mix better), 1 stick butter, and water. Put trukey in crock-pot up-side down, add stick of butter on top, put in celery & onion, add enough water to keep it from sticking .cook 6 hrs.on high or 8 on low. serve. I also like it cooked with just the turkey and a little water and B.B.Q. sauce add the last hour. Now for chicken, that's another postSmile Lots of luck.

Re: Can't eat red meat

I agree with last poster - use ground turkey in spaghetti, tacos, or any other dish that uses ground beef.
For breakfast, there's turkey bacon and chicken sausage available at many stores.
For summer time grilling, try chicken hot dogs, turkey bratwurst, or turkey burgers (carfeul, they are easily overcooked).

You can also have some great vegetarian dishes.  Chili (I know it's not quite appropriate for summer) with lots of veggies (peppers, onions) and kidney beans is great.  Split pea soup (leave out the ham bone but use onions, carrot and celery for more flavor) is great and full of protein.  My personal fave is black beans and rice.  I saute chopped onion and use one can of black bean and one can of corn.  Add nice dose of Cumin (to taste, it gives a good southwest flavor) and some cayenne (if you like spice) and serve over rice.   Tasty!!

hope this is helpful!  :)

Re: Can't eat red meat

I myself don't do red meat anymore, do to gastric bypass 3 years ago and I don't miss not eatting any red meat.

I enjoy chicken and turkey, fish as well.

I love to make turkey and chicken meatballs, if you miss that beef flavor add some dry beef flavor soup mix place into the old crock pot with you chioce of sauses and call it a day. With the two meats you still need to add all your seasonings such as egg, bread crumbs, onion, grated cheese, blk peppers wgich ever seasonings you would use normally.

I also enjoy the chicken and turkey flavored sausages they have out now, Very tasty.

Just whatever you would had done with any red meat you can pretty much recreate by useing other meats.

Good luck and enjoy all the new receipts out there.

Share some of them with us when they come in.
