Re: bisquick recipe needed

Newday,

I can't find a Cottage Cheese Pie made with Bisquick.  Maybe someone else will be able to locate the one you want.  In the meantime, I did find this one that my niece has made, if you want to try it.  AtlantaPat

Cottage Cheese Pie with Lemon and Cinnamon

Ingredients:  1 (9 inch) unbaked pie shell, 3 eggs, 1/2 cup granulated sugar, 1 teaspoon grated lemon peel, 1/8 teaspoon salt, 1/2 cup half-and-half, 2 cups cottage cheese -small curd, mashed or processed, 2 tablespoons flour, 1 tablespoon fresh lemon juice, 2 tablespoons granulated sugar, 1/2 teaspoon ground cinnamon.Preparation:  Put eggs in a mixing bowl; beat. Add sugar gradually, beating well. Add remaining ingredients and mix well. Pour the filling into an unbaked pie shell. Combine 2 tablespoons sugar with 1/2 teaspoon ground cinnamon; sprinkle over the filling. Bake at 350° for 30 to 45 minutes, or until a knife inserted in center comes out clean.
