Shortcut Supper

I generally don’t put much effort into making myself dinner during the week. After all, it’s just me (a sad commentary on my self-esteem, I know). At least two nights a week I whip together a meal using the following method: I spread pizza sauce (I love the squeeze-bottle kind) on a flour tortilla. Then I top the tortilla with shredded mozzarella cheese and pepperoni slices or green olives, depending on my mood. I bake the pizza right on the oven rack about 7 minutes, or until the cheese melts. Viola!—A personal pizza, no delivery guy needed. Another bonus? I only dirty a cutting board, pizza cutter and a plate. Hey, I’ve got better things to do than dishes.

Thats sounds really quick but I don't think I could eat that more then once a week. For a fast vegitarian meal cook a cup of rice and add a can of zuccini and tomatoes (Delmonte) its very filling and good for you. If you don't have a rice cooker that works in the microwave You can see one on my web site Its made by MiracleWare and works like a miracle. Think of all the things you could add to that one cup of cooked rice.

I have made these with my kids and they love them. I put out several topping choices and cheeses. They spread their own sauce and add their toppings. No more disagreements about what type of pizza to order.

I make the same idea, but i use fresh French bread slices or bagels....better then Stouffers sometimes!!
