Does anyone no why cupcakes always flaten out after they come out of the oven.  There are fine and first and then after a couple of minutes they just flatten out.

If your cupcakes are flattening after they come out of the oven, it means that they are underbaked.

If they just bake flat on top, it ususally has to do with the recipe. If you are using a mix, you will get better volume if you bake them at a 25°F temperature than most recipes tell you.
