Already I'm beat but it's a good tired I guess? The booth was a bit of a mess when we arrived on Tuesday. The flooring that we had created was totally pitched towards the front so we had to have "Darkside" use his 2 ton jack to lift the entire floor while the rest of the guys placed blocks underneath to level it out. It looks much better and it should work ok. Tomorrow will start early like 4:00 AM for the first official day of competition. We will start cooking Boston Butts (the top part of the shoulder) to enter in "Peoples Choice" competition which is basically the public voting on what pork they like the best. We finished 10th last year. Hoping to do better his year but it will be nice just to have a fun night with family and friends w/ low stress before most of the heavy competition starts on Friday.
